Peaches and Cream Bread Pudding

Tender sweet peaches bring a delicious twist to this classic comfort dessert.  Susbtitute an equal amount of fresh peaches for the frozen if they’re in season.  Serve warm, with the softly whipped cream or vanilla ice cream if desired.

Ingredients
  • 8 thick day old French bread any bread will do, really
  • 3 tbsp butter softened
  • 3 cups peaches thawed, sliced, halved crosswise
  • 1 cup milk original recipe said 2 but was soggy
  • 2/3 cup sugar
  • 1/2 cup cream 10% cream
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 tbsp icing sugar

Ingredients
  • 8 thick day old French bread any bread will do, really

  • 3 cups peaches thawed, sliced, halved crosswise
  • 1 cup milk original recipe said 2 but was soggy
  • 2/3 cup sugar
  • 1/2 cup cream 10% cream
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 1 tbsp icing sugar
Instructions
  1. Preheat oven to 350 F and get a rack set in the middle.
  2. Butter both sides of bread slices and tear into bite sized pieces.
  3. Toss with the peaches and place in a greased 8" square baking dish.
  4. Whisk together the milk, sugar, cream, eggs and vanilla until smooth, then pour this over the bread mixture, gently pressing where needed to soak. Let stand for 5 minutes.
  5. Bake at 350 F for 50 - 60 minutes, until golden, puffed and custard is set.
  6. Let cool for 10 minutes and dust with icing sugar before serving.
Recipe Notes

Any type of day old bread will do.  Buns, hot dog buns, etc... Don't cut your peach slices too small - you want the chunks.  Add cinnamon if desired.
