The Best Chocolate Chip Cookies
I know the picture doesn’t look like chocolate chip cookies, and that’s because they aren’t.
This recipe is a base to make white chocolate and macadamia nut cookies. One day I might make chocolate chip cookies with this recipe. One day… Until then..
Simple, straightforward, delicious, with a few variations (macadamia/white chocolate chip) that never fail.

Ingredients
- 1 cup salted butter
- 1 cup sugar
- 1 cup brown sugar
- 2 tsp vanilla extract
- 2 large eggs
- 3 cups all purpose flour
- 1 tsp baking soda
- 1/2 tst baking powder
- 1 tsp salt
- 1 cup chocolate chips or white chocolate (225 g)
- 1 cup macadamia nuts chopped

Instructions
- Preheat oven to 350 (convection oven).
- In a medium mixing bowl mix flour, baking soda, baking powder and salt. Set aside.
- Cream together butter and sugars until combined.
- Beat in eggs and vanilla until light (about 1 min).
- If using macadamia nuts, chop them finely until no bigger than a pea.
- Mix in the dry ingredients until combined.
- Add chocolate (or white) chips, macadamia nuts if using, and mix well.
- Using a scale, make balls about 30 g and place them on a cookie sheet.
- Bake for approximately 8-10 minutes. Take them out when they are just barely starting to turn brown.
Recipe Notes
You have to watch carefully for these to be done. Too much and they are dry, too little and they are left a bit doughy. Just right and, well, they're just awesome!
