Fried Rice with Egg

Ingredients
- 3 cups white rice 320 grams dry
- 3 tbsp sesame oil
- 1 medium onion chopped
- 1 tsp garlic minced
- 3 eggs lightly beaten

- 1/4 cup soy sauce
- 1/2 cup corn
- 1/2 cup peas
- 1/2 cup carrots sliced or diced
- 1 chicken breast optional
- 1 package shrimp optional

Instructions
Getting Set
- First, set your rice to cooking. Then pull frozen peas, carrots, and corn out of the freezer to thaw. Rinse the rice and set for 20 minutes.
- Slicing the chicken thinly is easiest done while it is partially thawed. Do this, and set aside.
- Crack your eggs, beat them slightly, and set aside.
Wok Towards It
- Place some sesame oil in a wok on medium, and add the onion and garlic to saute until translucent and soft. You can add the carrots here also if they are raw. Keep covered - I find adding water to the mixture helps disperse the heat and prevent browning.
- Once the onions are nearly done, lift the lid to boil off the remaining water,
- Add the all the vegetables, cover again, and cook until the mixture is heated throughout.
- Push everything to one side of the wok, then add the slightly beaten eggs into the hole. Let sit for a bit, then stir once, let sit again, etc... this will produce chunks of cooked egg.
- Add all the rice, and don't worry if the rice is still clumped up a bit. Pour the remaining sesame oil over top, and roughly scramble. Replace the lid, bringing the entire mixture to temperature.
Add Ins
- Once all is heated, now is the time to add your chicken and/or shrimp. Mix these in, cover again, and the heat of the mixture will cook them, but not over cook them.
- Finally, add the soy sauce, and roughly mix. I like a bite without soy, followed by one overdosed with it, rather than a smooth coating throughout.
- Grab a bowl, a spoon or fork, and enjoy!
Recipe Notes
This one is quite easy, and depending upon how many ingredients you add after the veggies, it can be a feast or just a meal. The addition of the sesame oil with the rice prevents the rice from getting sticky. Basically... don't be shy with the oil. If you can get the rice to start browning just a bit before you add the soy sauce.... mmmmmmm good.
